Airfry Okra Fries

If you’ve never tried okra this way, you’re in for a surprise. These air-fried okra fries come out unbelievably crisp on the outside while staying tender inside, no sliminess in sight. They make a great snack or side, especially when served hot with your favorite dipping sauce.

Ingredients

  • 250g okra
  • 4 green chilies
  • 5–6 garlic cloves
  • 5 cm piece of ginger
  • ¼ tsp turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • 1 tsp fine sea salt
  • 1 tsp garam masala
  • 2 tbsp gram flour (chickpea flour)
  • 2 tbsp self-raising flour
  • 1 tsp chaat masala
  • 1 lemon

Step 1

Blitz the ginger, garlic, and green chilies into a paste, or crush them together with a pestle and mortar.

Step 2

Mix the paste with the dried spices, salt, gram flour, and self-raising flour.

Step 3

Cut the okra lengthwise into quarters to make thin strips. Coat them in the flour mixture and let them rest for 30 minutes.

Step 4

Air-fry the okra in batches at high heat for 12–15 minutes, or until golden and crispy.

Step 5

Serve immediately with a squeeze of lemon and chaat masala
