This classic dessert brings together the comforting flavours of tender, spiced apples and a buttery, golden crumble topping. Perfectly balanced between sweet and tart, apple crumble is a cozy treat that’s ideal for any occasion. Serve it warm with a scoop of vanilla ice cream or a dollop of cream for a truly indulgent experience. Simple, yet irresistibly delicious.

Apple Filling

  • 3 apples, cut into cubes, I keep the skins on
  • 1 tbsp light brown sugar (check the sweetness of your apples)
  • 1 tsp fresh sage, chopped
  • 1/2 lemon juice
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Crumble

  • 50g butter
  • 50g oats
  • 40g flour
  • 1 tsp light brown sugar
  • 2 tbsp nuts (I used walnuts)

Custard

  • 300ml double cream
  • 2 eggs
  • 3 tbsp sugar
  • 1⁄4 tsp vanilla extract

Step 1: Apple Filling

Combine all the ingredients and let it sit while you prepare the topping. Then transfer the mixture into a small baking dish.

Step 2: Crumble Topping

Rub the mixture together until the butter forms small breadcrumb-like pieces, then sprinkle it over the apples. Bake at 190°C for 20-25 minutes.

Step 3: Custard

Heat the cream in a small pan.

Step 4

In the meantime, whisk the eggs, sugar, and vanilla in a bowl until pale and creamy. Gradually add the hot cream to the egg mixture while continuing to whisk.

Step 5

Pour the mixture back into the pan and continue whisking until it thickens. Add the salt and serve with the custard. If the mixture has any lumps, blend it with an immersion blender until smooth.
