Bhatura

Bhatura is a popular Indian deep-fried bread that is soft, fluffy, and often served with chole (spiced chickpeas) to create the beloved dish known as Chole Bhature. It is a light crispy flatbread similar to puri (but puri doesn’t usually have yoghurt in it) which is served with chana masala. It’s a staple in North Indian cuisine and is enjoyed for breakfast or as a hearty meal at any time of day.

Bhatura

  • 500g Plain Flour
  • ½ Tsp Ajwan (optional)
  • 1 Tsp Salt
  • ½ Tsp Baking Powder
  • 200g Full Fat Natural Yoghurt
  • 150ml Boiling Water
  • 1 Tbsp Oil
  • 2 Tbsp Oil At The End

Step 1

In a bowl, combine the plain flour, salt, ajwain, and baking powder. Stir in the yogurt, boiling water, and 1 tablespoon of oil.

Step 2

Knead for 5 mins until smooth and then add another 2 tbsp of oil and knead for 30 seconds. Cover and allow this to rest for 30 mins.

Step 3

Divide into small golf balls and roll into circles about 1 cm thick.

Step 4

Deep fry in medium-hot oil until puffed and golden. Allow to drain while standing upright. Serve with any curry, though it pairs best with chana masala.
