Brothy Harissa Lamb Mince Chickpeas

This brothy harissa lamb is the kind of meal that tastes like it’s been simmering away all day, but comes together in just 30 minutes. Rich, spiced lamb, hearty chickpeas, tender courgettes, and a warming harissa broth make it the perfect cosy dinner. Piled onto fluffy couscous, it’s comforting, flavour-packed, and ideal for an easy weeknight meal.

Ingredients

  • 500g Mince lamb
  • 1 Tsp olive oil
  • 3 Tbsp Tomato paste
  • 1 Tbsp Harissa paste
  • 1 Red onion, roughly chopped
  • 3 Cloves garlic, grated / chopped
  • ½ Tsp cinnamon or 1 tsp allspice
  • 1 Tin chickpeas
  • 2 Courgette, roughly chopped
  • Couscous

Step 1

Heat the olive oil in a large pot or deep frying pan over medium-high heat. Add the lamb mince and cook for 5-7 minutes, breaking it up with a spoon, until browned. Drain off any excess fat from the pan and discard before continuing

Step 2

Push the lamb to one side of the pan and add the tomato paste and harissa. Cook for 3-4 minutes, stirring occasionally, until dark brown.

Step 3

Add the red onion and cook for 3–4 minutes until softened. Stir in the garlic, and cinnamon and cook until fragrant.

Step 4

Add the courgettes and cook for 6-8 minutes, stirring occasionally, until softened. Stir in the chickpeas along with 150ml of water and mix well to combine.

Step 5

Serve warm over couscous.
