Ingredients

  • 6 cloves garlic, thinly sliced or roughly chopped
  • 1 cup about 200g leftover cooked rice (or from a rice packet)
  • 2 tbsp soy sauce
  • ½ tsp white pepper
  • 1 egg
  • 2 tbsp butter
  • 1 spring onion, finely chopped
  • ¼ tsp chilli flakes

Step 1

Heat some oil in a hot pan and fry the garlic until it turns golden brown and crispy. Add the rice, soy sauce, and white pepper, then toss everything together until the rice is evenly coated and heated through.

Step 2

In a pan with some oil, fry the egg until the edges are golden and crispy.

Step 3

Drain the oil from the pan, then add the butter and cook for about 5 minutes, stirring occasionally, until it turns a rich, dark brown. Stir in the spring onions and chili flakes and cook for an additional 2 minutes.

Step 4

Spoon the rice into a bowl, then top with the crispy egg and brown butter. Finish with a pinch of salt to enhance the flavours.
