Cacio e Pepe is a timeless Roman pasta dish that delivers bold flavours with minimal ingredients. Made with just pasta, Pecorino Romano cheese, and freshly ground black pepper, this dish is simple yet incredibly satisfying. The creamy, peppery sauce clings to the pasta, creating a comforting and rich meal that’s perfect for any occasion.

Ingredients

  • Spaghetti
  • Black pepper
  • Pecorino Romano

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions, making sure it's al dente.

Step 2

While the pasta cooks, freshly grind the black pepper in a pan over medium heat until fragrant—this will help release the pepper’s oils and intensify its flavour.

Step 3

Once the pasta is ready, reserve a cup of pasta water and drain the rest. Add the hot spaghetti to the pan with the black pepper, tossing to coat the pasta evenly.

Step 4

Gradually add the Pecorino Romano in small batches, stirring constantly. Slowly add the reserved pasta water, a little at a time, to create a creamy sauce that coats the pasta.

Step 5

Continue tossing and stirring until the cheese has fully melted and a smooth, peppery sauce has formed.

Step 6

Serve immediately, with extra Pecorino and black pepper to taste. Enjoy your perfect Cacio e Pepe!
