Caprese Salad is a simple yet elegant Italian dish that celebrates fresh, high-quality ingredients. Originating from the island of Capri, this salad highlights the vibrant flavours of ripe tomatoes, creamy mozzarella cheese, and aromatic basil. I never fully appreciated the difference that high-quality olive oil can make, but it truly has a significant impact on elevating this dish.

Ingredients

  • Cherry tomatoes
  • Mozzarella, torn
  • Basil
  • Extra virgin olive oil - the best you can find
  • Salt
  • Pepper
  • Balsamic vinegar

Step 1

Halve the cherry tomatoes and place them in a mixing bowl. Tear the mozzarella into bite-sized pieces and add them to the bowl with the tomatoes. Tear the basil leaves and scatter them over the tomatoes and mozzarella.

Step 2

Drizzle the extra virgin olive oil generously over the tomato and mozzarella mixture. Season with salt and freshly ground black pepper to taste. Add a splash of balsamic vinegar for a hint of acidity and sweetness.

Step 3

Gently toss the salad to combine all the ingredients evenly. Serve immediately for the freshest flavor, or let it sit for a few minutes to allow the flavours to meld.
