Bright, tangy, and packed with flavour, this Chaat Masala Corn is the perfect snack for any time of day. With a hint of spice and a burst of freshness, it’s a simple yet irresistible treat that brings the vibrant tastes of Indian street food right to your kitchen.

Ingredients

  • 2 Large corn cobs
  • 400g Potato gnocchi
  • 1 Red onion, finely chopped
  • 1 Green pepper, diced
  • 1 Red chilli, finely chopped
  • 4 Cloves garlic
  • 2cm Knob ginger, finely chopped
  • 1 Tsp chaat masala/ garam masala
  • 1-2 Tsp chilli powder
  • 1 Tsp cumin seeds
  • 1/2 Tsp ground coriander
  • 1/2 Tsp ground cumin
  • 2 Tsp butter
  • 50g Parmesan

Step 1

Remove the kernels from the cobs. Toast them in a pan drizzled with oil over medium heat for a few minutes until lightly golden, then set aside.

Step 2

Place the gnocchi in an air fryer and cook at 200°C (390°F) for 10–12 minutes until golden and slightly crisp. Set aside.

Step 3

Using the same pan, add the red onion, green pepper, chopped red chilli, and garlic. Sauté for 3–4 minutes until softened.

Step 4

Stir in chaat masala, ginger, cumin seeds, ground coriander, and ground cumin. Mix well.

Step 5

Add the corn back in the pan, melt in the butter and cook for another 2–3 minutes, letting all the flavours combine.

Step 6

Remove from the heat, plate the air-fried gnocchi with the vegetable mixture, sprinkle with grated parmesan, and serve immediately.
