Cheddar and Pickle Soup

A comforting twist on classic flavours, this Cheddar and Pickle Soup combines the rich creaminess of sharp cheddar cheese with the tangy kick of pickles. Perfect for those who love bold and savoury combinations. Thank you to Bartek for introducing me to the world of pickle soups!

Ingredients

  • 50g butter
  • 1 large onion
  • 6 cloves garlic
  • 2 tbsp plain flour
  • 500ml water
  • 250g pickles
  • 100g pickled jalapenos
  • ½ teaspoon turmeric
  • 500g potatoes
  • 250g Cheddar
  • 150g sour cream

Step 1

In a large pot, melt butter over medium heat. Add the onion and garlic, cooking for about 5 minutes until softened.

Step 2

Whisk in the flour and cook for 1 minute. Gradually add the water or broth, whisking continuously, and season with salt and pepper. Stir in the turmeric.

Step 3

Add the potatoes, bring to a boil, then reduce the heat and simmer for 10-15 minutes, or until the potatoes are tender.

Step 4

Stir in the chopped pickles, cheese, and sour cream, mixing thoroughly. Adjust the thickness to your preference.

Step 5

Garnish with additional pickles, a dollop of sour cream, and a sprinkle of chili flakes.
