If you’re looking for a curry that’s rich, comforting, and a little bit indulgent, this Cheesy Chicken Curry is the perfect dish to try. Tender chicken is simmered in a creamy, spiced sauce and finished with melted cheese for an extra layer of flavour. It’s the kind of meal that feels a little special but is still easy enough to make at home

Ingredients

  • 5 Cloves garlic
  • 4cm Knob ginger
  • 3-4 Green chillies
  • 500g Boneless chicken thigh, cut into small pieces
  • 200g Full fat yoghurt
  • 100ml Double cream
  • 1 Tsp ground black pepper
  • 1 Tsp garam masala
  • 1/2 Tsp ground mace (optional)
  • 50g Ghee
  • 5 Cardamon pods
  • 1 Cinnamon stick
  • 4 Cloves
  • 1 Large onion, finely chopped
  • 50g Cheddar grated
  • 50g Low moisture mozzarella, grated
  • Fresh coriander to serve

Step 1

Crush the garlic, ginger, and green chillies together.

Step 2

Combine the chicken with the yoghurt, cream, black pepper, garam masala, ground mace, and 1 tablespoon of garlic paste. Let it marinate at room temperature for 30 minutes.

Step 3

Heat the ghee in a pan, then add the cardamom pods, cinnamon stick, and cloves.

Step 4

Add the onion and garlic paste, then cook over low heat for about 10 minutes, until lightly golden.

Step 5

Reduce the heat to very low, add the marinated chicken, and mix well. Cover with a lid and cook on medium-low heat for 20–30 minutes, or until the chicken is fully cooked through.

Step 6

Remove the lid and add the cheese. Increase the heat, mix well, and cook for a further 5 minutes.

Step 7

Finish with fresh green chillies and coriander, then serve.
