Cheesy Chipotle Rice

Cheesy Chipotle Rice is a deliciously indulgent dish that combines fluffy rice with rich, creamy cheese and a smoky chipotle flavor. Plus, take out all the leftover veggies and scraps you have in your fridge and bang them in—it’s a fantastic low-waste option that’s good for your wallet as well as the planet! Ideal for taco nights, as a bed for grilled meats, or simply enjoyed on its own, this cheesy rice is sure to become a favorite in your kitchen!

Ingredients

  • 400g leftover cooked rice
  • 2 tbsp chipotle paste
  • 300g cheese (I used cheddar and mozzarella)
  • Small handful of coriander
  • 1 tsp cumin seeds
  • 2 limes
  • 1 tin black beans
  • 1 onion
  • 3 cloves of garlic
  • Any leftover veggies you have (peppers, corn, courgette, tomatoes, leeks)

Step 1

Preheat the oven to 200C Finely chop all your vegetables so they are all the same size.

Step 2

Add a large glug of oil and cumin seeds to a cast iron pan and fry off the onion for 5 mins. Then add the garlic and remaining veg and cook for 10 mins until cooked through.

Step 3

Meanwhile in a small bowl combine the chipotle paste, juice of a lime, 1 tsp oregano, 1 tsp salt and 2 tbsp water.

Step 4

Transfer to a large bowl and add the beans, rice, coriander, and chipotle sauce. Mix well so the rice is evenly coated.

Step 5

Spread butter over the cast iron and add half the rice. Press down with a back of a cup and sprinkle over half the cheese. And the remaining rice, press down.

Step 6

Bake in the oven for 20 mins then remove and top with the remaining cheese. Broil for 5 mins until melted.
