Chicken Adobo (Philippines)

Chicken Adobo is the Philippines’ quintessential comfort food, and the simplicity of the ingredients allows the chicken to absorb all the bold flavours, resulting in a dish that is both deeply satisfying and incredibly easy to prepare. This dish is incredibly special to me. It ignited a passion within me to embark on a journey into the world of food, exploring different countries and uncovering their culinary treasures. I’m grateful to the Philippines for inspiring this adventure and for its amazing cuisine, and a special thanks to Mae Magnaye Williams for introducing me to this dish.

 

Ingredients

  • 750g Chicken Leg And Thigh
  • 75ml Soy Sauce
  • 50ml White Vinegar
  • 2 Tbsp Brown Sugar
  • 7 Cloves Garlic
  • 5 Cm Ginger
  • 1 Onion
  • 1 Tbsp Whole Black Peppercorns
  • 2 Spring Onions
  • Salt
  • Vegetable oil

Step 1

In a bowl, mix together the chicken, soy sauce, vinegar, sugar, garlic, ginger, onion, peppercorns, and bay leaves. Cover and marinate in the refrigerator for at least 30 minutes. After marinating, drain the chicken and set the marinade aside.

Step 2

Heat oil in a large skillet over medium heat. Add the chicken and cook, turning occasionally, for 8 to 10 minutes, or until the chicken is lightly browned on all sides.

Step 3

Add the reserved marinade and 2 cups of water to the skillet. Stir and bring to a boil. Cook on high heat for 5 minutes, then reduce the heat, cover, and simmer for about 25 minutes, or until the chicken is fully cooked.

Step 4

Garnish with green onions and serve with steamed rice.
