Chocolate Pudding Pie with Orange Caramel

This delightful plant-based dessert is perfect for the festive season and guaranteed to be a crowd-pleaser! It’s so delicious that you’ll only need to make one dessert—because let’s face it, you’ve got plenty on your plate already!

Ingredients

  • 300g chocolate cookies
  • 85g dairy free butter
  • 450g silken tofu
  • 250g dark chocolate (I used 70%)
  • 1 tbsp icing sugar, optional - check how sweet your chocolate is
  • 1/4 tsp salt
  • 3 tbsp oat milk
  • Whipped cream to serve (use dairy free cream as alternative)

Orange caramel

  • 3 tbsp white sugar
  • 2 large oranges

Step 1

Crush the cookies and combine them with the butter until the mixture resembles wet sand. Press the mixture into your pie or tart tin.

Step 2

Gently melt the chocolate in the microwave.

Step 3

Blend the silken tofu, icing sugar, salt, and oat milk until smooth. Then, add the melted chocolate and blend again until fully combined.

Step 4

Taste the mixture and adjust the sweetness by adding more icing sugar if needed. Since chocolates vary in sweetness, you might need to add extra if the chocolate is too dark!

Step 5

Pour this into your pie dish and allow it to firm up in the fridge

Step 6: For the orange caramel

Squeeze the juice out of one large orange.

Step 7

Next, heat 3 tbsp of white sugar in a frying pan. Let the sugar melt undisturbed until it turns a dark amber colour. Then, carefully add the orange juice to halt the caramelisation. Stir until well combined.

Step 8

Cut the second orange into segments, then halve the segments and mix them into the caramel.

Step 9

Serve the pie topped with whipped cream and the orange segments.
