Cold Rice and Tomato Salad

This Cold Rice and Tomato Salad is simple, refreshing, and perfect for warm weather. It’s a great way to use up leftover rice and comes together quickly with just a few ingredients. Light, tangy, and full of flavour, this salad makes a great side dish or a light lunch on its own.

Ingredients

  • 150g cooked rice, chilled from the fridge
  • Large handful cherry tomatoes (about 10)
  • Large handful basil or parsley, finely chopped
  • 1/4 red onion, thinly sliced
  • 1 tbsp capers
  • 1 tin tuna

Dressing

  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (I love this one from @iowtomatoes)
  • 1/2 lemon juiced
  • 1 tsp dried oregano
  • 1 clove garlic, grated

Step 1: Dressing

In a small jug or bowl, whisk together the olive oil, balsamic vinegar, lemon juice, grated garlic, and dried oregano until well combined.

Step 2

In a mixing bowl, add the chilled cooked rice, chopped tomatoes, sliced onion, chopped herbs, capers, and tuna.

Step 3

Pour in the dressing and mix everything well. Taste and add a pinch of salt if needed.

Step 4

Enjoy immediately or let it chill a little longer in the fridge before serving.
