Coronation Chickpea Sandwich

If you’ve got some leftover vegan mayo, this is the perfect way to make use of that can of chickpeas. The Coronation Chickpea Sandwich is a delicious, plant-based option that features chickpeas mixed with flavourful spices, herbs, and creamy elements, often resembling a classic chicken salad but with a vegan twist. This sandwich is perfect for lunch or a quick snack, providing a satisfying and nutritious meal.

Ingredient

  • 1/2 White Onion
  • 3 Tbsp Tomato Paste
  • 2 Garlic Cloves
  • 3cm Knob Ginger
  • 1 Tsp Chilli Powder
  • 1 Tsp Ground Coriander Powder
  • 1 Tsp Ground Cumin
  • ½ Tsp Tumeric
  • 100g Vegan Mayo
  • 400g Chickpeas
  • 1 red onion
  • 1 lime
  • Pinch of salt
  • ½ Cucumber, ribboned
  • 100g Cress
  • 1 Tomatoes, sliced
  • 50g Spinach
  • 4 Slices Thick Bread

Step 1

Thinly slice the red onion, then toss it with lime juice and a generous pinch of salt. Mix well.

Step 2

Finely chop the onion and sauté it in a generous amount of oil in a saucepan. Grate in the garlic and ginger, then stir in the tomato puree. Cook for about 3 minutes, or until the mixture deepens in color. Add the chili powder, ground coriander, cumin, and turmeric, and cook for another 2 minutes until fragrant, adding more oil if needed.

Step 3

Remove from heat and transfer the mixture to a large bowl. Stir in the mayo and a generous pinch of salt. Add the chickpeas and mix thoroughly.

Step 4

Spread 1 teaspoon of mango chutney on two slices of bread. Layer on the spinach, cucumber, tomatoes, filling, and cress. Place another slice of bread on top and enjoy.
