Get ready for a flavour-packed ride with Creamy Spiced Sausage Pasta! This dish brings together juicy sausage, bold spices, and creamy goodness for a pasta experience that’s anything but boring. Ingredients

  • 300g pasta
  • 150g sausages (I used spiced lamb sausages)
  • ½ white onion, finely chopped
  • 1 tsp ginger, grated
  • 1 tsp Garlic, grated
  • 1 tbsp black pepper
  • ½ tbsp Coriander seeds
  • ½ tbsp Cumin Seeds
  • ½ tsp chilli flakes
  • 3 tbsp tomato puree
  • ¼ lemon
  • 2 Tbsp double cream
  • 1 Handful of Parmigiano Reggiano, Grated Finely
  • Salt

Step 1

Toast the whole spices and then blitz them or use ground spices if that’s what you have on hand!

Step 2

Crumble the sausages and add them to a pan with a drizzle of oil. Cook for 5-10 minutes, or until crispy, then remove from the pan and set aside.

Step 3

Add the onion, garlic, and chili to the pan and cook for 1 minute.

Step 4

Add the tomato paste and spices and cook for 3 minutes until the color deepens.

Step 5

Pour in 200 ml of water and let the paste bubble and cook while your pasta boils.

Step 6

Return the sausage to the pan along with the pasta and a bit of pasta water. Toss everything together to coat the pasta evenly.

Step 7

Season generously with salt, lemon juice, and double cream. Add more cream if desired! Serve with Parmesan and enjoy!
