Crispy Kimchi and Sausage Fried Rice

The tangy kick of kimchi combined with savoury sausage and crispy rice creates a satisfying and comforting meal. Quick to prepare and bursting with layers of flavour, it’s an irresistible twist on a classic fried rice

Ingredients

  • 400g Pork Sausage
  • 1 Small Onion, finely sliced
  • 4 Cloves Of Garlic, minced
  • 3 Cm Ginger, minced
  • 1 Red Chilli, minced
  • 2 Tbsp Soy Sauce
  • 500g Kimchi
  • 500g Cooked Packet Rice
  • 1 Tbsp Sesame Oil
  • 5 Spring Onions, finely sliced
  • 4 Eggs
  • Vegetable Oil

Step 1

Remove the casings from the pork sausages and crumble the meat directly into a hot wok with a bit of oil.

Step 2

Add the onion and cook for a few minutes until softened. Then, stir in the garlic, ginger, and red chili, cooking until fragrant.

Step 3

Stir in the soy sauce and kimchi, and cook for 3 minutes, or until the liquid has evaporated.

Step 4

Add the rice and mix thoroughly. Toss in the spring onions and drizzle with sesame oil. Season with salt, sugar, and additional soy sauce if needed.

Step 5

Heat some oil in a pan and fry the eggs until the whites are crispy. Use the hot oil to baste the whites, helping them cook faster than the yolks.

Step 6

Plate the fried rice and top it with the crispy fried egg. Enjoy!
