Craving something a little different? This Curried Pasta is a flavorful fusion of creamy pasta and aromatic curry spices that’ll spice up your usual pasta routine. It’s the perfect balance of heat and comfort, making it an easy go-to for a satisfying meal!

Ingredients

  • 1 small onion
  • ½ green pepper (optional)
  • 8 green chillies
  • 8 cloves garlic
  • A large knob Ginger
  • 2 tbsp ghee (or butter)
  • ½ tsp cumin seeds
  • 75g tomato puree
  • 1 tsp chilli powder
  • 200ml double cream
  • 500g pasta
  • 100g cheddar cheese.

Step 1

Finely chop the onion and green peppers.

Step 2

Pound the ginger, garlic, and green chilies with a generous pinch of salt in a pestle and mortar.

Step 3

Cook the pasta in a pot of boiling salted water.

Step 4

Heat the ghee in a pan and add the cumin seeds, onions, and peppers. Cook for a few minutes until golden and softened, then stir in the garlic paste and ground spices. Cook for another 2 minutes.

Step 5

Stir in the tomato puree and cook for 5 minutes, until the paste deepens in color.

Step 6

Add the cream and 200ml of pasta water to the cooked pasta, then stir everything together. Season with salt to taste. Grate the cheese over the top and serve.
