Known as Bhutan’s spicy comfort food, Ema Datshi is a simple, yet flavourful stew made from chili peppers and creamy local cheese, creating a warming and satisfying meal. Often served with red rice, this dish showcases the Bhutanese love for spice and is a true reflection of the country’s unique culinary traditions. Thank you Dechen for telling me about this dish!

Ingredients

  • 1 large tomato, roughly chopped
  • 2 cloves garlic, roughly chopped
  • 1 -2 green chillies, chopped
  • 1/2 small onion, sliced
  • 2 potatoes, peeled and sliced
  • 150g mixed cheeses - I used gouda, process American cheese, mozzarella and feta
  • 50g butter

Step 1

Place all the vegetables in a pot, add enough water to cover them, and bring to a simmer. Cook for about 10 minutes, or until the vegetables are tender.

Step 2

Add the butter and cheese on top of the vegetables, then cover the pot. Let it simmer for a few more minutes until the cheese has melted. Remove the lid, stir everything together until well combined, and serve over rice.
