Got a sweet tooth craving but no time to bake? Please try my Emergency Bread Cake! This quick and easy dessert transforms simple slices of bread into a deliciously satisfying treat. Perfect for when you need a dessert fix in a flash, it’s a no-fuss way to enjoy something sweet and comforting.

Ingredients

  • 2 loaves plain white bread / I used Japanese Shokupan to be fancy, you can also use brioche
  • 3 tbsp condensed milk mixed with 4 tbsp water (for soaking)
  • 150g Jam
  • 100g Strawberries
  • 100g lemon curd
  • 600ml double cream (for the filling)

Italian Meringue Buttercream Frosting Ingredients

  • 4 egg whites large, room temperature
  • 250g white sugar
  • 400g softened butter
  • Zest of 1 lemon
  • 75ml water

Step 1 : Frosting

In a stand mixer, whisk the egg whites and 50g of sugar until soft peaks form.

Step 2

In a saucepan, combine the remaining sugar with water and heat until it reaches 110°C.

Step 3

Whisk the egg whites on a very low speed and slowly drizzle in the hot sugar along the side of the bowl. Continue whisking for an additional 5 minutes, or until the bowl feels cool to the touch.

Step 4

Increase the mixer speed to medium and add the softened butter, beating until the mixture turns into a thick, creamy frosting. Zest the lemon and stir it in thoroughly.
