Feijoada (Brazil)

Feijoada is a traditional Brazilian stew that showcases the country’s rich culinary heritage. This hearty dish is made with black beans and a variety of meats, often including pork and beef, and is slow cooked to create a deep, flavourful sauce. Feijoada is typically served with rice, collard greens, and orange slices, making it a perfect comfort food for family gatherings and celebrations. A big thank you to Nat!

Ingredients

  • 1-2 brown onions, diced
  • 4 cloves garlic, minced
  • 4 bay leaves
  • 800g tinned black beans
  • 500g Mixed meats such as pancetta, Pork belly pieces, chorizo, blood sausage
  • 800g smoked ribs, separated
  • Oil for cooking, two tbsp

To Serve:

  • Orange slices
  • Brazilian salsa vinaigrette
  • Steamed rice
  • Farofa
  • Coriander, roughly chopped
  • Flat-leaf parsley, roughly chopped
  • Spring greens
  • Crispy potato sticks

Step 1

In a large pot, heat 2 tablespoons of oil and add the diced onion. Cook for about 15 minutes, stirring until the onions are soft and slightly caramelized. Add a splash of water during cooking to help create steam.

Step 2

Once the onions are soft, add the garlic, smoked meats, and bay leaves, and cook for 1 minute. Then, return the beans and their liquid to the pot.

Step 3

Add enough water to cover everything completely. Bring to a boil, then reduce the heat to a simmer and cook for 2-3 hours. Alternatively, you can use a slow cooker or pressure cooker for this step.

Step 4

Serve with oranges, farofa, potato sticks, steamed kale, and Brazilian salsa. Garnish with chopped coriander and parsley.
