Lohikeitto, or Finnish Salmon Soup, is a traditional dish from Finland that highlights the country’s connection to its natural surroundings, particularly its cold waters abundant with fish. This soup has been a staple in Finnish homes for centuries due to its simplicity and accessibility. I haven’t had many fish soups, but I was amazed by how delicious this one is. It’s like a creamy, cheesy lox bagel transformed into a soup, and I’m absolutely here for it! Plus, it’s super refreshing and light.

Ingredients

  • 500 g salmon, skinned and cut into large chunks
  • 10 potatoes, peeled and cut into chunks
  • 3 carrots, sliced
  • 1 onion, thinly sliced
  • 1 leek, thinly sliced
  • 1l water
  • Salt
  • Butter
  • 1/4 tsp white pepper
  • 1/2 tsp all spice
  • 1 bay leaf
  • 200ml double cream
  • Plenty of fresh dill, finely chopped

Step 1

In a large pot, melt a knob of butter over medium heat. Add the onion and leek, and sauté until they are softened. Stir in the carrots and potatoes, and cook for a few minutes, stirring occasionally.

Step 2

Pour in the water and add the bay leaf, white pepper, allspice, and a generous pinch of salt. Bring to a boil, then reduce the heat and let it simmer until the potatoes and carrots are tender, which should take about 15-20 minutes.

Step 3

Add the salmon chunks to the pot and simmer gently for 5-7 minutes, or until the salmon is fully cooked.

Step 4

Stir in the double cream and heat through gently, avoiding a boil. Taste and adjust the seasoning with additional salt if necessary. Remove the bay leaf. Ladle the soup into bowls and garnish generously with fresh dill. Enjoy your Finnish Salmon Soup!
