Fresh Pasta with Chanterelles

This dish brings together the delicate flavors of fresh pasta and earthy chanterelle mushrooms, creating a simple yet elegant meal. With just a few ingredients, it’s a perfect way to showcase the rich, buttery taste of the chanterelles, making it an ideal choice for a cozy dinner or special occasion.

Ingredients

  • 250g plain flour
  • 2 eggs
  • 1 egg yolk
  • 350g chanterelles or any mushroom
  • 4 tbsp butter
  • 2 cloves garlic
  • 1 tsp fresh thyme
  • 100g parmesan
  • 1/2 lemon

Step 1

Knead the plain flour, eggs, egg yolk, and ½ teaspoon of salt together until a soft dough forms. Cover and let it rest at room temperature for 30 minutes.

Step 2

Roll the pasta out as thin as possible, then slice it into thin strips to make tagliatelle.

Step 3

Bring a pot of water to a boil and season it generously with salt.

Step 4

Sauté the chanterelles in a hot, dry pan until some of the moisture evaporates. Add 2 tablespoons of butter and continue cooking until the mushrooms begin to brown. Stir in the garlic and thyme, cooking for an additional 30 seconds.

Step 5

Cook the pasta for 1 1/2 minutes.

Step 6

Add the pasta along with a ladle of pasta water. Stir in the Parmesan and more pasta water as needed. Toss everything together until a glossy sauce forms.

Step 7

Finish with the juice of half a lemon. Taste and adjust the seasoning, then sprinkle with black pepper before serving.
