Got overripe bananas sitting on the counter? Transform them into these irresistibly rich and fudgy banana bars! Packed with the natural sweetness of bananas and a soft, gooey texture, these bars are a perfect treat for any time of the day.
Ingredients
250g butter
3 eggs
200g dark brown sugar
100g plain flour
50g cornflour
200g condensed milk
3 brown bananas
½ tsp salt
½ tsp baking powder
200g cream cheese
100g icing sugar
1 tsp cinnamon
Step 1
Set your oven to 165°C and allow it to preheat.

Grease and flour a 28cm square tin, then line it with baking paper.

Melt the butter in a saucepan over medium heat and cook for about 15 minutes, or until it turns golden brown and develops a nutty aroma. Set aside 100g of the browned butter in a small bowl and refrigerate for later use.

Mash the bananas with the condensed milk until well combined. For a smoother texture, use a hand blender to eliminate any chunks.

Stir in the melted brown butter, eggs, sugar, plain flour, cornflour, salt, and baking powder. Mix everything together until smooth and fully combined.

Pour the mixture into the prepared tin and bake for 30 minutes. When tested with a toothpick, it should come out slightly sticky.

For the best results, let the bars cool at room temperature for 12 hours. While you can enjoy a piece straight out of the oven, you'll notice the texture becomes even better as it sets over time.

To make the frosting, whip the reserved 100g of browned butter with the cream cheese and icing sugar until smooth and creamy.
Step 9
Cut the banana bars into squares and spread the frosting evenly over the top. Finish by sprinkling a pinch of cinnamon and enjoy!
