Ful Medamas (Sudan)

For the dish itself” Fuul is the king of dishes in Sudan and is eaten in a variety of flavours throughout Africa and the Middle East” Sudanese ful is distinguished by the use of cumin and being topped with Sesame oil. The dish can be eaten any time of day and traditionally, in Sudan it’s served for breakfast along with a glass of fresh boiled sweet black tea. The main ingredient, fava beans, are not only delicious but also packed with protein, fiber, and essential nutrients, making Ful Medames a nutritious option for breakfast or any meal. Ingredients

  • Tin of plain ready to eat fava beans
  • Half onion
  • 1 tomato
  • Some olive oil
  • 1 1/2 teaspoon cumin
  • Salt and pepper
  • parsley to garnish
  • 1 or 2 boiled eggs to garnish
  • Sesame oil to finish

Step 1

Start with olive oil in the pan, chop and add the half onions and cook on medium heat until soft, then add chopped half of the tomato.

Step 2

Add the contents of the fava beans tin, add cumin salt and pepper and cook on medium heat until most of the liquid has evaporated. Use a wood spoon to crush down some of the beans while they are cooking

Step 3

To serve, pour onto a plate, decorate with the remaining chopped tomato, parsley and a drizzle of olive oil. In Sudan we use Sesame oil because Sesame is widely grown. Sprinkle a little more cumin and add the boiled eggs to decorate.
