Garlicky Spinach Dhal with Grated Halloumi

If you’re looking for a bowl of pure comfort with a little kick, you’ve found it. This dhal is loaded with garlic, warming spices, and plenty of spinach, then crowned with a shower of salty halloumi for the ultimate finishing touch.

Ingredients

  • 150g Split red lentils, rinsed well
  • 1 Large tomato, finely chopped
  • 1 Large knob fresh ginger, grated or finely chopped
  • 3 Green chillies, finely chopped
  • 1 Tsp ground cumin
  • 200g Spinach, roughly chopped
  • 30 ml Vegetable oil (2 tbsp)
  • 6 Cloves garlic, finely chopped
  • 1 Tsp chilli powder
  • 1 Tsp salt, or to taste
  • 100g Halloumi, grated, for serving

Step 1

Rinse the split red lentils under warm water several times until the water runs mostly clear. Place the lentils in a medium saucepan with 500 ml of water.

Step 2

Stir in the chopped tomato, ginger, green chillies, and ground cumin. Bring the mixture to a simmer uncovered for 10 to 15 minutes until the lentils are soft and have broken down into a thick dhal consistency.

Step 3

Stir the spinach into the dhal and cook for 2 to 3 minutes, until wilted.

Step 4

In a small saucepan, heat the vegetable oil over medium heat. Add the finely chopped garlic and chilli powder, cooking for 2 to 3 minutes until the garlic becomes fragrant and lightly golden. Immediately pour the garlic chilli oil over the dhal and stir well to combine.

Step 5

Season with the salt and adjust to taste.

Step 6

Finish each bowl with plenty of grated halloumi. Serve warm on its own or alongside rice, naan, or flatbreads.
