Ingredients

  • 500g Parsnips
  • 500g Carrots
  • 1 Tsp Mustard Seeds
  • 1 Tbsp Cumin
  • 3 Tbsp Ghee
  • 100g Mango Chutney
  • 3 Tbsp Ginger
  • 1 Tsp Salt

Step 1

Preheat the oven to 180°C (350°F). Cut the parsnips and carrots into evenly sized chunks. Combine them in a baking tray with the other ingredients and toss well. Bake for 35–45 minutes, or until they are lightly charred and very soft.
