Green Chutney Chicken

Green Chutney Chicken is a vibrant dish that draws inspiration from the bold flavours of Indian and Pakistani cuisines. The star of this recipe is the aromatic green chutney. Grilling chicken on the BBQ is a marvelous experience, and the best part is, it only takes a few minutes to prepare!

Ingredients

  • One large bunch coriander
  • 1/2 bunch mint (half the amount of coriander)
  • 1/2 tsp cumin
  • 5 garlic cloves
  • 5-8 green finger chillies
  • 1 lemon, juiced
  • 1 tbsp full fat yoghurt
  • 1 tsp salt
  • 1 kg of chicken thighs, skin-on and boneless

Step 1

Blend all the chutney ingredients together, setting aside a small bowl for dipping later.

Step 2

Marinate the chicken with the remaining chutney for at least 30 minutes.

Step 3

Preheat your grill to indirect heat (around 190°C). I’m using my Green Egg (thank you so much @biggreenegguk—I absolutely love it).

Step 4

Place the chicken skin-side down on the grill. Once the skin is nicely browned and crispy, turn the chicken over and continue cooking until done, about 10-15 minutes.
