The Grinder Sandwich is a hearty, flavourful sub loaded with layers of meats, cheese, and fresh vegetables, all brought together by a tangy, zesty dressing. This sandwich gets its name from the Italian-American delis where it’s a go-to favourite. Perfect for lunch or dinner, it’s a satisfying bite that packs a punch of flavour in every layer.

Ingredients

  • 150g Mayo
  • 3 Tbsp Red Wine Vinegar
  • 1 Tbsp Italian Seasoning
  • 2 Tbsp Everything Bagel Seasoning (Optional) Mines From @condimania
  • A Pinch Of Chilli Flakes
  • 1 Head Of Lettuce
  • 1/2 Red Onion
  • 100g Sweet Pepper Drops (I Used @cooksandcouk )
  • 100g Sun-Dried Tomatoes
  • Small Handful Of Chives (Optional)
  • Salt And Pepper
  • Charcuterie (Get A Selection Pack For More Variety!)
  • Cheese (I Used Gouda)
  • Tomatoes - Seasoned With Salt And Pepper
  • 4 Tbsp Butter
  • 6 Cloves Of Garlic
  • 1 Tbsp Everything Bagel Seasoning
  • Parmesan
  • 4 Soft White Rolls (I Used Bake At Home Ones)

Prepare the Garlic Butter

In a small saucepan over medium heat, melt the butter. Add the minced garlic and cook for 1-2 minutes until fragrant. Stir in the Everything Bagel seasoning and set aside.

Bake the Rolls

If using bake-at-home rolls, follow the package instructions to bake them until golden brown. Once baked, slice the rolls in half lengthwise.

Toast the rolls

Brush the cut sides of the rolls with the prepared garlic butter. Place them on a baking sheet and sprinkle with grated Parmesan. Toast in the oven until golden and crispy.

Make the Sandwich Filling

In a large bowl, combine the mayo, red wine vinegar, Italian seasoning, Everything Bagel seasoning (if using), and chili flakes. Mix well. Add the shredded lettuce, red onion, sweet pepper drops, sun-dried tomatoes, and chives (if using). Toss to coat everything evenly. Season with salt and pepper to taste.

Assemble the Sandwiches

Layer the charcuterie, cheese, and seasoned tomato slices on the bottom half of each toasted roll. Top with the prepared filling mixture. Place the top half of each roll over the filling. Press down gently to help the sandwich hold together.
