Ingredients

  • 200g milk powder
  • 75g plain flour
  • 15g ghee
  • 2 eggs
  • 6 cardamom
  • 2 tsp baking powder
  • 1/8 tsp salt
  • 2-3 tbsp milk

Syrup

  • 400g white sugar
  • 800ml water
  • 6 cardamom pods
  • A pinch saffron

Step 1

Crush all 12 cardamom pods, remove the shells, and grind the seeds. Set the shells aside for later use.

Step 2

Mix together the milk powder, plain flour, ghee, eggs, salt, half of the crushed cardamom seeds (from 6 pods), and baking powder.

Step 3

Use your hands to mix the ingredients into a dry dough. Gradually add a few tablespoons of milk until the dough becomes pliable enough to shape into balls.

Step 4

Take about 1 tablespoon of the mixture and roll it into smooth balls, pressing firmly to eliminate any creases.

Step 5

Heat sufficient vegetable oil for deep frying over low heat.

Step 6

Fry the balls on a very low heat for about 10 minutes, or until they are deeply browned. Then, allow them to cool for 15 minutes.

Step 7

Bring the mixture to a gentle simmer, allowing the sugar to dissolve. Let it bubble for 3 minutes, then turn off the heat.

Step 8

Using a toothpick, prick holes in the gulab jamun and let them soak in the sugar syrup for 30 minutes. Enjoy them either hot or cold, and we topped ours with chopped cashews for an extra touch.
