Gulha is a popular Maldivian snack, often enjoyed as a savoury treat during teatime or at special gatherings. These small, golden, deep-fried dumplings are filled with a flavorful mix of tuna, coconut, and spices, offering a perfect balance of textures and bold flavours.

Filling

  • 150g smoked tuna – diced/sliced (substitute: 1 can Light meat tuna chunks)
  • 50g coconut – scraped/grated
  • 1/2 Scotch bonnet (githeyo mirus) – finely chopped
  • 1/4 cup curry leaves – finely chopped
  • 1 onion – finely sliced
  • 1 clove garlic – pressed/grated/very finely chopped
  • 1 tsp ginger – grated
  • 25ml lemon juice
  • 1/4 tsp turmeric powder
  • Salt to taste

Dough

  • 120g plain flour
  • 1 tsp salt
  • 50ml vegetable oil
  • Warm water

Step 1: Filling

Crush the onions, garlic, ginger, curry leaves, chilies, lemon juice, turmeric, and salt together.

Step 2

Add the tuna and coconut, mixing everything into a thick, paste-like consistency.

Step 3

Shape the mixture into small, marble-sized balls.

Step 4: Dough

Mix the oil and salt into the flour.

Step 5

Gradually add warm water while kneading until the dough becomes dry and smooth. Be careful not to add too much water to avoid a sticky texture.

Step 6

Shape the dough into small cups, add the filling inside, then seal and smooth into balls.

Step 7

Deep fry over medium to low heat until golden brown and crisp.
