Spice up your weeknight dinner with this Hot Curry Tuna Pasta! Quick, flavorful, and satisfying, it combines tender pasta with caramelised courgettes, aromatic spices, and protein-packed tuna. Ready in under 30 minutes, it’s the perfect dish for when you want something comforting with a little kick.

Ingredients

  • 1 courgette, thinly sliced
  • 90g pasta
  • 3 cloves garlic, finely chopped
  • 1 red chilli (optional), finely chopped
  • 1 tbsp hot curry powder
  • 1 tsp chilli oil (my favourite is @mamayu chilli oil)
  • 1 tbsp fish sauce
  • 1 tin tuna
  • A large handful of cherry tomatoes, halved

Step 1

Heat a pan with a good drizzle of olive oil, add the courgette with a pinch of salt, and cook over medium heat for 6–8 minutes until nicely caramelised.

Step 2

At the same time, bring a large pot of lightly salted water to a boil and cook the pasta until it’s al dente.

Step 3

Stir in the garlic, chilli, curry powder, and chilli oil with the courgette, and cook for 1 minute until aromatic.

Step 4

Deglaze with the fish sauce and a ladle of pasta water.

Step 5

Add the tuna, breaking it up thoroughly, and stir to combine. Pour in extra pasta water if needed, cooking until the mixture takes on a ragu-like consistency.

Step 6

Stir in the cherry tomatoes and let them simmer for 3 minutes.

Step 7

Add the cooked pasta and toss well, adding extra pasta water if needed to coat it evenly with the sauce.

Step 8

Serve immediately with a final drizzle of chilli oil. Enjoy!
