Juicy One Pot Chicken is a flavorful and convenient dish that brings together tender chicken pieces, aromatic herbs, and fresh vegetables all cooked in a single pot. This recipe ensures that every bite is infused with rich flavors, making it the perfect weeknight meal. This is for when I’m craving Hainanese chicken rice but don’t have the time to make it. Hainanese chicken rice would probably be my death row meal, and this dish doesn’t come too far behind. Just make sure to get yourself a fatty chicken—I PROMISE YOU! With minimal cleanup and maximum taste, this one-pot wonder is sure to become a family favorite!

Ingredients

  • 1kg FATTY Chicken Thigh, Skin And Bone-In
  • 1 Bunch Spring Onions, Finely Chopped
  • 100g Ginger, Finely Chopped
  • 10 Cloves Garlic, Finely Chopped
  • 3 Tbsp Soy Sauce
  • 500g Short Grain Rice
  • 750ml Chicken Stock (or water)
  • 2 Tbsp Shaoxing Wine
  • Crispy Chilli Oil, To Serve

Step 1

Place the chicken thighs, skin side down in a pan on the lowest heat. Cook on very low for 10 mins until the fat of the skin has rendered out. Place the chicken on the side.

Step 2

Meanwhile wash your rice until the water is almost clear, but not completely clear - you want it to be slightly sticky for this.

Step 3

Add in the spring onions, ginger and garlic with a pinch of salt and cook for 5 mins until fragrant.

Step 4

Add in the washed rice along with the chicken stock, soy sauce and Shaoxing wine and give it a good mix.

Step 5

Bring to a simmer and add in the chicken, then pop on a lid and cook for 15 mins. Allow to rest for 10 mins with the lid on and then tuck in. Enjoy with more spring onions and chilli oil.
