Käsknöpfle, also known as Käsknöpfli, is a beloved dish from Liechtenstein that showcases the region’s culinary heritage. Often referred to as cheese dumplings or pasta. Käsknöpfle was considered a peasant dish, often made with local ingredients that were readily available. It has been a staple comfort food in Liechtenstein for generations, particularly enjoyed in the colder months.

Ingredients

  • 375g flour
  • 4 eggs
  • 250ml water
  • 250g Emmental, grated
  • 2 onions, sliced
  • 1 tsp Salt

Step 1

Mix the flour, salt, eggs, and water to form a thick dough that should be able to pass through a colander. Let the dough rest for 20 minutes.

Step 2

Cook the onions in a pan with a splash of oil for 20 minutes, or until they are caramelized.

Step 3

Bring a pot of water to a boil. Push the dough through a colander and into the boiling water. Continue this process with all the dough and cook for 3 minutes.

Step 4

Drain the pasta and immediately stir in the grated cheese so it melts. Serve with the caramelized onions and chives
