This Lemony Courgette Udon is a refreshing and light twist on a classic noodle dish. Ingredients

  • Olive Oil
  • ½ Courgette
  • ½ Leak
  • 3 Cloves Garlic, Roughly Chopped
  • 1 Tsp Black Pepper
  • ½ Lemon
  • 200ml Coconut Milk
  • 1 Tbsp Miso Paste
  • 2 Tbsp Soy Sauce
  • 400g Udon
  • 1 Spring Onion

Step 1

Slice the leek in half lengthwise, then thinly chop it. Grate the courgette.

Step 2

Heat a generous splash of oil in a wok, then add the leek and courgette along with a hearty pinch of salt. Cook over medium heat for 10 minutes, stirring occasionally, until softened and caramelized.

Step 3

In the meantime, mix together the coconut milk, miso paste, and soy sauce until well combined.

Step 4

Stir in the garlic and black pepper and cook for 2 minutes.

Step 5

Pour in the coconut milk and stir thoroughly. Add the udon noodles, cover with a lid, and reduce the heat to low. Let it cook for about 5 minutes, or until the udon softens and everything can be mixed together evenly.

Step 6

Finish by adding the zest and juice of half a lemon, then sprinkle with chopped spring onions. Serve and enjoy!
