Miso Butter Onion Spaghetti

This spaghetti is incredibly rich and buttery, packed with caramelized onions and savory miso paste—a match made in heaven, now served in pasta form. The miso brings a gentle saltiness, while the buttery onions add sweetness and create a velvety sauce that coats the spaghetti beautifully. A comforting and flavorful dish that’s sure to satisfy!

Ingredients

  • 4 Large Brown Onions
  • 5 Cloves Of Garlic
  • 50g Butter
  • 1 Tbsp Miso Paste
  • 1 Tbsp Balsamic Vinegar
  • 300ml Chicken Stock
  • 150g Creme Fraiche
  • 150g Parmesan
  • 500g Spaghetti
  • Handful Of Parsley
  • Bread Crumb Topping
  • 1 Tbsp Black Pepper
  • 100g Bread - Blitzed Into Crumbs
  • 25g Parmesan
  • 1 Lemon

Step 1

Thinly slice the onions and chop up the garlic.

Step 2

Add the butter into a large pan and add the onions with a big pinch of salt. Cook for 30 mins on a low medium heat until deeply caramelised. If the onions start to stick, deglaze with some of the chicken stock and then keep stirring. Add in the garlic halfway.

Step 3

Get the pasta cooking in some very lightly salted boiling water.

Step 4

For the breadcrumb topping, blitz up the bread to make breadcrumbs. Then grind the black pepper into a small frying pan and toast for 30 seconds. Add in the breadcrumbs and grate in the parmesan. Cook for 5 mins until toasted and zest over some lemon zest.

Step 5

Add in any remaining chicken stock, creme fraiche, miso paste and balsamic vinegar. Add the spaghetti with a splash of pasta water and toss it together. Grate in the parmesan and let it melt through the pasta so it’s nice and glossy. Finally, toss through the parsley. Serve it up in your bowl and top with your crunchy pepper crumbs.
