Simple, fast, and bursting with fresh flavours, Quick Grated Tomato Pasta is perfect for those days when you want a delicious meal without the fuss. Inspired by rustic Italian cooking, this dish uses just a handful of pantry staples—ripe tomatoes, garlic, olive oil, and pasta—but delivers an incredible depth of flavour. Since they can be a bit acidic, I like to add a touch of honey to balance out the flavours. 🙂

Ingredients

  • 300g tomato grated
  • 85g-100g spaghetti
  • 1 tbsp olive oil
  • 4-5 cloves garlic sliced
  • 1 tsp honey
  • Fresh basil

Step 1

Boil the pasta in salted water, cooking it 4 minutes less than the package instructions.

Step 2

Grate the tomatoes into a bowl, discarding the skins, and mix in the honey.

Step 3

Gently cook the garlic in oil until lightly browned, then deglaze the pan with a splash of pasta water.

Step 4

Add the tomatoes, bring to a simmer, and stir in the partially cooked pasta. Cook for 4-5 minutes until the pasta is tender and the sauce is well-coated. Add more pasta water if needed.

Step 5

Finish with fresh basil.
