Rolex, a popular Ugandan street food, isn’t what you’d expect from its name—it’s not a luxury watch but rather a delicious, handheld snack that has become a national favorite. The name “Rolex” comes from a playful twist on “rolled eggs,” which is exactly what this dish is: a freshly made chapati (flatbread) wrapped around an omelette filled with vegetables like tomatoes, onions, and cabbage. Chapati

  • 250g plain flour
  • 150ml warm water
  • 1/2 tsp salt
  • ½ A Cup of Oil or ghee
  • 1 medium red onion, finely chopped
  • ½ finely grated carrots (optional)

Omelette

  • 4 Eggs
  • 1/2 Tomato
  • 1/2 red Onions
  • 1/4 cup cabbage
  • 1/4 green bell pepper
  • Small handful coriander

Step 1

In a large bowl, combine the flour, grated carrot, chopped red onion, and 1½ tablespoons of oil. Gradually add water, a little at a time, mixing the ingredients to form a dough.

Step 2

Knead the dough for about 10 minutes until it is smooth and does not stick to your hands. The dough should be of medium softness for optimal chapati.

Step 3

Divide the dough into equal portions, roughly the size of a golf ball. Roll each portion between your palms to form smooth balls without cracks.

Step 4

Lightly brush each ball with oil and sprinkle a pinch of flour on top. Dust the work surface with flour.

Step 5

Use a rolling pin to roll each ball into a flat circle, about 5 inches wide. Flip the dough as you roll and add flour if it sticks to the surface or rolling pin.

Step 6

Heat a pan over medium flame and add 1 tablespoon of oil. Place the rolled-out chapati onto the pan and stretch it to fit the pan’s width, ensuring it is as thin as possible.

Step 7

When you see raised bumps on the surface, flip the chapati using a spatula. Remove the chapati from the pan when both sides are golden brown. Chapati is best served warm and slightly thick.

Step 8: Instructions for Rolex

In a bowl, break the eggs and whisk them well.

Step 9

Add salt, chopped onions, and finely chopped coriander (if using). Optionally, add your choice of spices or dried herbs. Mix until the eggs and vegetables are well combined.

Step 10

Heat a pan and add vegetable oil. Pour the egg mixture into the pan and let it cook until it begins to set. Carefully flip the omelette to cook the second side.

Step 11

When the omelette is almost done, place the cooked chapati on top. Transfer the chapati and omelette to a plate, optionally topping with caramelised onions.

Step 12

Starting from one edge, firmly roll the chapati over the omelette, ensuring the omelette is slightly longer than the chapati. Continue to roll until fully wrapped. Enjoy your Rolex with a side of avocado for added flavour!
