Salt and Pepper Okra Fries

These Salt and Pepper Okra Fries are the perfect crispy, savoury snack! With a simple seasoning of salt and pepper, the natural flavour of the okra shines through in every crunchy bite. Easy to make and full of flavour, they’re a delicious twist on traditional fries!

Ingredients

  • 250g okra
  • 50g cornflour
  • 1 onion
  • 4 cloves garlic
  • 1 red chilli
  • Spring onion
  • Vegetable Oil for deep frying

Spice mix

  • 1 tsp MSG
  • 1 Tsp Sugar
  • 1/2 tsp salt
  • 1 Tsp Ground White Pepper
  • ½ Tsp Garlic Powder
  • ½ Tsp Onion Powder
  • 1/2 tsp Chilli powder
  • Pinch of Sichuan Powder

Step 1

Cut the okra into small, bite-sized pieces.

Step 2

Chop the onion and spring onion, slice the chili, and finely chop the garlic.

Step 3

Combine all the ingredients for the spice mix.

Step 4

Place the okra in a bowl with the cornflour and 3 tablespoons of water. Toss thoroughly until the okra is coated with a slightly dry batter.

Step 5

Heat the oil for deep frying to medium and fry the okra in batches for 3-4 minutes, or until crispy. For an extra crunch, increase the heat to high and fry for an additional 30 seconds.

Step 6

Heat a wok over high heat and add a splash of oil. Fry the onion, garlic, chili, and spring onions for a few minutes, then add the fried okra. Sprinkle in a generous amount of the spice mix, tasting as you go to avoid using too much. Toss everything together well. Serve hot.
