Salt and Pepper Oyster Mushrooms is a simple yet delicious dish with a perfect combination of crispy fried mushrooms, aromatic garlic, and a spicy kick from fresh peppers. This dish, inspired by classic Chinese flavours, is quick to prepare and can be served as an appetizer or snack. That seasoning dust is truly magical—I even made an extra batch and tried it on popcorn, which was amazing! If you can find shichimi, definitely use it; otherwise, chili flakes will work as a substitute.

Seasoning dust

  • ½ Tsp Ground White Pepper
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 2 Tbsp MSG
  • 2 Tsp Sugar
  • ½ tsp Sichuan Peppercorn Powder
  • 1 Tbsp Shichimi or sub Chilli Flakes
  • 1 tsp chicken powder
  • ½ tsp five spice powder

Ingredients

  • 1 onion
  • 1 pepper
  • 3 chilies
  • 5 cloves garlic minced
  • 3cm knob of ginger minced
  • 500g oyster mushrooms

Step 1

In a small bowl, mix all the ingredients for the seasoning dust. Set aside.

Step 2

Heat a large pan over medium-high heat. Add a bit of oil and toss in the sliced onion, pepper, and chillies. Sauté until they soften slightly, about 3-4 minutes.

Step 3

Throw in the minced garlic and ginger. Stir-fry for another minute until fragrant.

Step 4

Increase the heat to high. Add the oyster mushrooms to the pan and cook until they start to turn golden and crispy around the edges, about 5-7 minutes. Stir occasionally to prevent burning.

Step 5

Sprinkle the seasoning dust over the mushrooms and vegetables. Toss everything together until well-coated and evenly seasoned. Cook for another 1-2 minutes to let the flavors meld. Remove from heat and serve immediately. These are perfect on their own or as a side dish to your favorite meal.
