This Sausage and Harissa Pasta is the perfect fusion of comfort food and bold, fiery flavours. The smoky heat of harissa pairs beautifully with the savoury richness of sausage, creating a sauce that clings to every bite of pasta. Whether you’re craving a quick weeknight dinner or an elevated twist on a classic, this dish delivers on taste and simplicity.

Ingredients

  • 1 onion
  • 5 garlic cloves
  • 200g sausage
  • 3 tbsp harissa paste (I used rose harissa by @belazu_co)
  • 3 tbsp tomato puree
  • 100g cream cheese
  • 400g pasta

Step 1

Blend the onion and garlic until smooth, or if you prefer, mince or grate them instead.

Step 2

Cook your pasta in a pot of boiling, lightly salted water.

Step 3

Heat a generous drizzle of olive oil in a hot pan, then add the harissa and tomato puree. Cook on high for about 3 minutes until the mixture deepens in colour, then stir in the onion and garlic.

Step 4

Cook for another 3 minutes, then squeeze the sausage meat out of the casings into the pan. Let it crisp up slightly before deglazing the pan with a splash of pasta cooking water.

Step 5

Stir in the cream cheese, then add the pasta, tossing everything together. Add a bit more pasta water if needed to achieve a smooth, glossy sauce.
