Sopa Paraguaya is one of those dishes that really captures the heart of Paraguay. Despite its name, it’s not a soup at all—it’s a tasty cornbread packed with cheese and a bit of onion for flavour. This comforting treat is perfect as a side dish or just on its own, making it a favourite at family gatherings and celebrations. Ingredients

  • 2 1/2 Cups Fine Cornmeal
  • 500ml Milk
  • 4 Onions, Chopped Finely
  • 350g Mozzarella, Cut into Cubes
  • 1 Tsp Baking Powder
  • 4 Eggs
  • 1 Tsp Salt
  • 1 Tbsp Vegetable Oil

Step 1

Preheat the oven to 180°C. In a skillet, sauté the onions until they become translucent, then season with salt.

Step 2

In a bowl, whisk the eggs until they become foamy.

Step 3

In a separate bowl, combine the cornmeal, cooked onions, and milk, stirring until well mixed. Then, add the eggs and cheese, and mix thoroughly.

Step 4

Lightly grease a baking dish with oil and pour the mixture into it. Bake for 30 to 40 minutes, or until the top is golden brown. Test the Sopa Paraguaya by inserting a toothpick; it should come out clean. Allow it to cool before cutting into individual pieces.
