Speedy Egg and Tomato Stir Fry is a quick, flavourful dish that brings together the simplicity of eggs and the freshness of ripe tomatoes. This delightful stir fry is perfect for busy weeknights or when you’re in need of a satisfying meal that can be prepared in under 15 minutes. There are countless variations of this dish, so feel free to use whatever ingredients you have on hand to make it your own!

Ingredients

  • 3 Tomatoes
  • 2 Spring onions
  • 2 cloves garlic
  • 2 Eggs (I only had one)
  • 1 tbsp ketchup
  • 1 tbsp soy sauce
  • 1 tsp corn flour + 1 tbsp water

Step 1

Prepare the Ingredients by chopping the tomatoes, spring onion, and garlic.

Step 2

Cook your rice or reheat leftover rice with a bit of oil.

Step 3

Add some oil to a heated pan and then mix in the chopped tomatoes, spring onion, and garlic.

Step 4

Stir in the corn flour slurry, soy sauce, and ketchup.

Step 5

Move the tomato mixture to one side of the pan, crack the egg into the empty space, and scramble it. Once scrambled, mix it all together. Serve the stir-fry over your rice. Enjoy!
