Bring bold flavours to your table with this quick and hearty dish. Spicy harissa beans, paired with crispy garlic croutons, make for a satisfying meal or snack. Perfect for when you want something easy yet packed with flavour, this recipe is a celebration of spices, freshness, and texture in every bite.

Ingredients

  • 1 tin butter beans
  • 2 tomatos, grated
  • 2 tbsp Harissa
  • 1 tsp chilli flakes
  • 1 onion
  • 5 cloves garlic
  • 200g bread
  • 1 tsp garlic powder
  • 100g yoghurt
  • 1 lemon
  • Small handful mint

Step 1

Heat a drizzle of olive oil in a pan over medium heat. Add the chopped onion and grated garlic, cooking until softened and fragrant.

Step 2

Stir in the grated tomato and let it simmer for a few minutes until slightly thickened.

Step 3

Sprinkle in the chili flakes, stirring well to combine.

Step 4

Spread the bread cubes onto an oven tray. Drizzle with olive oil and sprinkle with garlic powder. Bake in a preheated oven at 180°C (350°F) until golden and crisp, about 8-10 minutes.

Step 5

Add the beans to the tomato mixture in the pan, stirring to coat them in the sauce. Cook for another 5-7 minutes to warm through.

Step 6

Place the garlic croutons on a serving plate, then spoon the harissa beans over the top.

Step 7

Drizzle with olive oil, sprinkle with fresh mint leaves, and add dollops of yogurt. Serve immediately and enjoy!
