This Spicy Thai Peach Salad is a bold, refreshing twist on summer salads. Sweet, juicy peaches pair perfectly with salty halloumi, fresh herbs, and a punchy Thai-inspired dressing.
Ingredients
2 tbsp rice
100g halloumi, cubed
2 peaches, sliced
2 tomatoes (can use a mix with cherry tomatoes too), cut into chunks
1 shallot, thinly sliced (optional)
Dressing
2 tbsp fish sauce
2 tbsp extra virgin olive oil
1 tsp honey
1 Thai red chilli, finely chopped
1 clove garlic, grated
1 lime, juiced
Large handful of mint
Step 1
Toast the rice in a pan until it turns golden, then remove it and grind into a fine powder.
Step 2
Add 1 tablespoon of olive oil to the same pan and fry the halloumi until golden. Alternatively, you can air-fry it for 10 minutes.
Step 3
Combine all the ingredients for the dressing.
Step 4
Arrange the tomatoes, halloumi, peaches, and shallots (if using) on a plate. Drizzle with the dressing, then finish with mint and a sprinkle of toasted rice.
