Stamppot is a classic Dutch comfort dish that combines mashed potatoes with a variety of vegetables, creating a warm and hearty meal perfect for chilly days. Simple, filling, and full of flavour, it’s a beloved staple in the Netherlands that brings both tradition and home-cooked goodness to the table.

Ingredients

  • 1kg potatoes (flourish)
  • 600g kale
  • 250g bacon bits (cubes) > tip from grandma
  • 40g unsalted butter
  • 50-100ml full-fat milk
  • 1 pinch nutmeg (not traditional, but adds flavour)

To Serve

  • 1 smoked sausage (rookworst)
  • Gravy
  • whole-grain mustard

Step 1

Peel the potatoes and cut them into evenly sized pieces.

Step 2

Bring a large pan of salted water to a boil. Add the potatoes, then place the kale on top.

Step 3

Cover the pan with a lid and cook the potatoes and kale for around 20 minutes.

Step 4

Meanwhile, cook the bacon bits in a pan until they’re nice and crispy.

Step 5

Warm up the smoked sausage and gravy until heated through.

Step 6

Drain the water, then add the butter and mash the potatoes until smooth. Stir in the milk, nutmeg, pepper, and salt. Finally, mix in the crispy bacon bits.

Step 7

Serve alongside the gravy, mustard, and smoked sausage.
