Strawberry Matcha Latte Blondies

I’ve been absolutely hooked on strawberry matcha lattes lately and couldn’t resist finding another way to enjoy the flavor combo. These Strawberry Matcha Latte Blondies are a perfect fusion of earthy matcha, sweet strawberries, and creamy white chocolate, all baked into a fudgy blondie base.

Ingredients

  • 100g Butter
  • 2 - 3 Tbsp Matcha Powder
  • 100g Light Brown Sugar
  • 1 Tin (400g) Condensed Milk
  • 3 Eggs
  • 100g Plain Flour
  • ½ Tsp Salt
  • 1 Tbsp Corn Flour
  • ¼ Tsp Flaky Salt
  • 50g White Chocolate, Chopped

Topping

  • 200ml Double Cream, Whipped
  • 150g Strawberries, Sliced

Step 1

Preheat the oven to 170°C (fan-forced)

Step 2

Melt the butter in a pan over medium heat. Continue cooking for about 5 minutes, or until it turns golden brown and develops a rich, nutty aroma.

Step 3

Pour the browned butter into a bowl, then whisk in the sugar, eggs, and condensed milk until well combined.

Step 4

Sift the flour, cornflour, matcha powder, and salt into the bowl.

Step 5

Stir in the white chocolate.

Step 6

Pour the mixture into a lined 23cm square baking tin.

Step 7

Bake for 20 minutes, then allow to cool completely. Once cooled, top with whipped cream and fresh strawberries.
