Crispy chicken nuggets are tossed in a tangy, flavourful sauce made with a perfect balance of sweet and savoury ingredients. Served over a bed of rice, this dish is quick, easy, and sure to become a family favourite. Perfect for weeknights when you’re craving something satisfying and full of flavour!

Ingredients

  • 12 chicken nuggets
  • 1 onion, chopped
  • 1/2 red bell pepper, chopped
  • 5 tablespoons tomato ketchup
  • 250 ml fresh pineapple juice
  • 3 tablespoons sugar
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons water
  • 1 level tablespoon cornstarch
  • 1/2 teaspoon sesame oil
  • 1 teaspoon light soy sauce

Step 1

Bake the chicken nuggets in the oven following the package instructions, then set them aside.

Step 2

Warm a small amount of oil in a pan over medium heat. Sauté the onions and red pepper until they soften.

Step 3

Combine the tomato ketchup, pineapple juice, sugar, rice wine vinegar, water, sesame oil, and soy sauce in the pan. Stir well and bring the mixture to a gentle simmer.

Step 4

Dissolve the cornstarch in 2 tablespoons of water to create a slurry. Stir it into the pan and cook until the sauce thickens.

Step 5

Place the cooked chicken nuggets into the sauce and toss until they are evenly coated. Serve over rice and enjoy!
