Craving a comforting bowl of pasta but short on time? This 15-Minute Bolognese is here to save the day! Packed with rich flavors from savory ground meat, tomatoes, and a blend of aromatic herbs, this quick and easy sauce is ready in a flash—perfect for busy weeknights or when you want something delicious without the long cook time.

Ingredients

  • 250g fresh tagliatelle
  • 150g ground veal
  • 50g pancetta
  • 40g butter
  • 1/2 onion
  • 1/2 carrot
  • 1/2 medium celery stalk
  • 1 tbsp flour
  • 300ml good beef stock
  • 1/2 tsp fresh thyme
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper
  • 1/8 tsp Nutmeg
  • Grated parmigiano Reggiano cheese, to serve

Step 1

Fill a large pot with water, add a pinch of salt, and bring it to a boil for the pasta.

Step 2

Dice the veal into small pieces and finely chop the pancetta, onion, carrot, and celery.

Step 3

Heat the butter in a pan, then add the veal, pancetta, and chopped vegetables. Season with black pepper and a small pinch of salt.

Step 4

Once the veal has browned, sprinkle in the flour, add a pinch of nutmeg, and pour in a ladle of stock.

Step 5

Continue cooking for 10 minutes, adding more stock as needed to maintain the desired consistency.

Step 6

Meanwhile, cook the tagliatelle until al dente. Drain, then toss it with the sauce and serve topped with grated Parmigiano Reggiano.
