The perfect Carbonara

Nothing beats the classic Italian comfort food, and this Perfect Carbonara recipe brings you an authentic taste that’s rich, creamy, and packed with flavour. If you’ve watched Alex French Guy Cooking on YouTube, you already know you can trust him completely. For someone who’s always been intimidated by carbonara, I’m amazed by how easy and delicious this recipe is. I highly recommend checking out his full video!

Ingredients

  • 280g spaghetti (spaghettini if you can find it)
  • 4 egg yolks
  • 200g guanciale in 1cm cubes
  • 30g grana Padano, grated
  • 20g pecorino Romano, grated
  • 1 tsp freshly ground black pepper
  • Lots of pasta water

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, according to the package instructions (usually about 8-10 minutes). Make sure to reserve a cup of pasta water before draining.

Step 2

While the pasta is cooking, heat a large pan over medium heat. Add the cubed guanciale and cook for 3-4 minutes, stirring occasionally, until the fat renders and the guanciale becomes crispy. Remove from heat and set aside.

Step 3

In a bowl, whisk together the egg yolks, grated grana padano, pecorino romano, and freshly ground black pepper. Set aside.

Step 4

Once the pasta is ready, use tongs to transfer it directly into the bowl with the egg and cheese mixture. Toss gently to coat the pasta and add the guanciale.

Step 5

Place the bowl over a pot of simmering water (double boiler) and cook for 2 minutes, stirring occasionally, until the mixture reaches a creamy texture.
